So, what’s the food actually like? My concern was how complex the recipes were going to be. It’s all well and good to have the ingredients at your door, but if it’s going to take a few hours to prepare these minor miracles, then that’s going to be a right turn off.
Mindful Chef heard my request for a seafood dish and a vegetarian dish, and they sent me two meals through on the delivery day of my choosing. Here’s what they sent…
Zingy Salmon, Cherry Tomatoes & Mange Tout
The box arrives, and each recipe is split into two sections. There’s a paper bag with most of the ingredients, and a chill-wrapped section for the salmon. There’s also a booklet containing all the recipes for that week. Yup, Mindful Chef change their recipes every week.
This recipe isn’t complex. You’re basically chopping the ingredients, oven-cooking the salmon with the marinade you make, and pan frying the rice, mange tout and spring onions. The ginger and lime sauce is the major player for the taste here. The salmon is clearly good quality, but it’s the sauce that packs the punch. It contains the tamari, lime juice, ginger, honey and red chili flakes. You pour half over the salmon, and half over the dish at the end.
It’s as simple as it gets. Anyone could make this, regardless of cooking ability. The whole thing, from prepping the food to having it on the plate, took less than 30 minutes.
It’s healthy and tastes incredible. I have a soft spot for properly seasoned salmon, and this was incredible.
Sweet & Sour Sticky Tofu, Crispy Kale & Rice
Tofu takes a while to make sense to someone who is historically a meat-eater. In it’s uncooked state, it’s deeply unpalatable. It’s wet, sponginess does not fill one’s mind with ideas of culinary delights. And yet, when properly cooked, it transcends into something rather tasty which takes on the tastes of whatever you choose to cook it in and gives you something wonderful and relatively healthy.
Despite the fact that I’ve enjoyed cooking since I was young, I’ve never made a sweet & sour dish before. The ingredients exactly match the recipe. If you need 60g of something, Mindful Chef will give you 60g of that thing. There’s no waste. It’s going to be practically impossible to get this wrong.
This dish takes longer than the salmon dish, but only because the brown rice takes 25 minutes. The rest is a simple case of chopping veg, and mixing the sweet & sour sauce ingredients.
You then coat the drained tofu, fry it, bake the sea-salted kale to make it crispy, and prepare your dish.
You wouldn’t think that food this tasty would be this easy to make, and yet, here it is. Mindful Chef do all the hard work of making up the recipe and shopping for the (best) ingredients. You just chop it and cook it. Sorted.
I learned about cooking through doing these recipes. Usually when I make a dish, the onions are the first thing that go in the pan. With the sweet & sour dish, I put them in towards the end and was rewarded with crunchy, sweet onions. Delicious.
Clearly when it comes to putting food on your table, this is not the cheapest way to do it. I would be viewing any of the recipe box delivery companies as being a luxury rather than a way of getting your meals on a daily basis.
